Turtles Cookie Dough Frosting

Prepare yourself for the indulgence! This takes the classic chocolate chip cookie dough experience and dials it up to eleven adding pecans and caramel for the ultimate Turtles Cookie Dough Frosting. I used this in my Chocolate Cookie Dough Cake for Rylan’s birthday, it was a huge hit! The use and application for this frosting can change, using it as a filling for a cake allowed me to use caramel sauce to really nail that Turtles experience, but that might not work for you

One batch of this recipe created a robust filling for a 12″ cake, but should completely cover an 8″ round inside and out.

Modifiers and substitutions will be at the bottom like always for anyone that needs to make adjustments. Possibilities include: Dairy-free

Turtles Cookie Dough Frosting

A twist on the classic chocolate chip cookie dough that we all love. Pecan and caramel is one of my favourite flavour combinations, mixing this into cookie dough frosting was a huge win.

  • 1 cup Softened Butter
  • ½ cup Packed Brown Sugar
  • 2 cups Powdered Sugar
  • ⅔ cup All Purpose Flour (Baked and cooled, See Notes)
  • ½ tsp Salt
  • 2 tbsp Milk
  • 1 tsp Vanilla
  • 1 cup Mini Chocolate Chips
  • ½ cup Chopped Pecans
  • ½ cup Toffee Chips (Optional, See Notes)

Preparation – Flour

  1. To kill any bacteria in the raw flour spread on a baking sheet and bake at 350℉ for 3-5 minutes or microwave for 1 minutes in a microwave safe bowl, stirring every 15 seconds. Let it cool completely before adding to the buttercream or it will melt the butter.

Buttercream

  1. Using an electric mixer or stand mixer cream the butter and brown sugar together, mixing until light in colour and very fluffy.

  2. Turning off the mixer, add in the powdered sugar in parts, mixing on low until incorporated, then add in more. Once all incorporated mix on medium for another minute.

  3. Add in the cooled flour and mix until incorporated plus a minute to ensure it's smooth. You may need to sift it if clumpy.

  4. Blend in the milk and vanilla mixing until light fluffy and smooth.

  5. Use a spatula to scrape down the sides of the bowl, fold in the chocolate chips and pecans. (Toffee chips if desired)

Rylan’s Rating: 10/10 – “Unreal”

I would only recommend adding the toffee chips if you aren’t going to be using caramel sauce in your application. For cakes or cupcakes you can add a drizzle of caramel, for less mess toffee chips will that caramel flavour.

Modifiers and Substitutions

I hope to keep playing with this one specifically working with sugar. Refined sugar is on my elimination list which is why I work with stevia. But stevia wasn’t going to work for this knowing the texture that is created when creaming with butter. Hopefully the Turtles Cookie Dough Frosting will get a second chance to be more glucose friendly in the future.

Dairy – Used a plant based butter and milk, and add in plant based chocolate chips.
