Discard Sourdough Naan

A quick and easy, versatile go-to snack in my house, this Discard Sourdough Naan never disappoints! Great for turning into wraps, enjoying with curry or our personal favourite; devouring with homemade hummus (that recipe coming soon). It comes together quick and easy and is one of the best ways to utilize that sourdough discard.

Modifiers and substitutions will be at the bottom like always for anyone that needs to make adjustments. Possibilities include: Dairy-free/Vegan

Discard Sourdough Naan

Quick, easy and full of flavour, this delicious naan comes together in a pinch. Great with curry and hummus, makes incredible wraps!

  • 1 cup Unfed Discard Sourdough Starter
  • ½ cup Warm Milk (between [wprm-temperature value=”105″ unit=”F”] and [wprm-temperature value=”115″ unit=”F”])
  • ¼ cup Greek Yogurt
  • 1 cups All Purpose Flour
  • 1 tsp Baking Powder
  • Pinch of Salt
  • 5 tbsp Melted Butter
  1. Combine the sourdough starter, warm milk, and yogurt in a large bowl, stir until smooth and consistent

  2. Add in the flour and baking powder, as it mixes it will become a slightly sticky and shaggy dough

  3. Cover the bowl with a clean, damp dishtowel and let it rise in a warm place for 2-3 hours. The oven with the light on is perfect

  4. On a clean lightly floured surface, dump out the bowl scraping the sides if it sticks. Knead the dough for a few minutes until smooth, you may need to add a little more flour as you work to ensure your hands don't stick.

  5. Preheat a heavy skillet or cast iron pan on medium-high heat. Turn the exhaust fan on before you start, I always end up with a smoky kitchen.

  6. Shape the dough into a flat ball or log and divide into 8 equal pieces. Roll flat to about ¼" thickness

  7. Brush melted butter on one side and place butter side down into the hot skillet. Brush the top side with butter while the bottom starts to cook.

  8. Cook each side for about a minute watching for bubbles to form on the top. Check the underside to ensure it is golden brown to your liking and flip.

  9. Cook for another minute, check the bottom for brown.

  10. Once done transfer to a plate lined with a towel and wrap if you are going to be serving right away. Or transfer to a cooling rack if you are prepping them a head of time so they can cool without holding too much moisture.

  11. Continue cooking process with the remaining pieces and enjoy!

Note 1:

  • To prevent too much smoking from the hot pan and dry cook you’ll want to work fairly quickly. I would recommend rolling out and buttering one side of each piece before you start cooking. This way as you remove the cooked one from the pan the next piece is ready to go in. 
  • You can run a bit of an assembly line process, roll and butter one, put it in the pan, butter the top side, roll and butter the next, check the one in the pan and flip if ready.
  • No matter what I always end up having to crack a window to clear out the bit of smoke that happens, some things can’t be avoided.

Note 2:

You can have an absolute blast playing with flavouring in these. Garlic naan? Oh yes please! Cheese naan? Don’t have to ask me twice! This Discard Sourdough Naan is versatile, delicious and sure to be a hit with your next meal or snack.

Modifiers and Substitutions

Dairy-free/Vegan: A few great options;

  • Plant-based milk and butter is a no brainer – but you may want to sprinkle with a bit more salt at the end depending on your taste in butter.
  • The yogurt I played with a bit and I have swapped in oat or almond based yogurt with no issues. And just recently I discovered a great plant-based sour cream that is a bit of a game changer. These turn out beautiful using either plant based yogurt or sour cream.
