Pancake & Waffle Recipe

This might be one of the oldest family recipes that I know of. My grandmother used to make this Pancake and Waffle recipe when I was young and my mother used the same one in our home. More often than not my dad was the one making pancakes and it’s one of my fondest memories. We would always have pancakes on Christmas morning. This recipe works great for both pancakes and waffles, I do have some time saving tips at the bottom, but this is the full proper way to follow the recipe.

Pancakes & Waffle Recipe

A classic breakfast staple, this is the full traditional way if you have extra time or you can speed it up by following a few tips. Check those out at the bottom. These are fluffy, moist and can be fancied up with blueberries, saskatoons, strawberries, chocolate chips and so much more or enjoyed as a plain, classic.

  • 1½ cups All Purpose Flour
  • 1 tbsp Baking Powder
  • ½ tsp Salt
  • ½ tsp Nutmeg
  • ½ tsp Cinnamon
  • 2 tbsp Sugar
  • 2 Eggs (Seperated)
  • 1½ cup Milk
  • 1 tsp Vanilla
  • ½ cup Melted Butter
  1. Mix together the flour, baking powder, salt, sugar, nutmeg and cinnamon in a medium bowl

  2. Measure the milk in a large bowl or 8 cup measuring cup for easy pouring

  3. Separate the egg yolks from the whites and put the yolks in the milk

  4. Add vanilla to milk and yolks and blend together

  5. Beat the egg whites until stiff peaks form

  6. Add the flour mixture to the milk mixture part at a time, blending after each addition.

  7. Stir in the melted butter

  8. Fold in the egg whites gently, the batter should be light and fluffy

  9. Heat a griddle or large skillet on medium heat OR heat waffle maker. Pour or scoop the batter.

  10. If desired, top with fruit or chocolate chips. Cover with a little more batter so the sugar doesn't burn or stick.

  11. With pancakes, watch the surface of the batter for bubbles to form and the edges above the skillet to begin to set. They are ready to flip. Follow waffle maker instructions for the correct doneness.

  12. Continue with all remaining batter. Top with berries, dust with sugar, cover in syrup, do whatever makes you happy and enjoy

Tips

  1. I will openly admit that I don’t always follow the recipe exactly. An easy time saving hack for this Pancake & Waffle recipe is to skip separating the eggs, on mornings where I don’t feel like whisking the egg whites I will add the whole eggs to the milk, and blend them together really well. They won’t be quite as fluffy but they still turn out delicious, much better than any box mix.
  2. You can add your blueberries or other toppings directly to the bowl of batter to ensure they are fully covered when cooking. Be mindful that the batter will likely change colours as you mix in your ingredients. But who doesn’t love blue pancakes or waffles?
  3. Because they are going to be cooked in batches place the finished pancakes or waffles on a plate in the microwave or in a barely heated oven on a cookie sheet to keep warm.
