Apple Muffins
Hands down my favourite way to work through the apples that have been sitting in the fruit bowl for a little too long. It’s the apple equivalent of making banana bread. These Apple Muffins are sweet, cakey and great for a grab-and-go breakfast. I usually add one to my lunch and enjoy one (or two) after dinner for dessert.
There aren’t many Modifiers or Substitutions for this mix, there is a swap for sweetener but it’s purely preference. I will add any others as I find them; but the Cauldron Corner will be at the bottom as always! These are already dairy-free and low glucose (with unsweetened apple sauce) which is a big win. This is a recipe I keep playing with to get it just right, so there may be some future edits as I bake a few more batches.
Apple Muffins
A great way to use apples that are a little past their prime. Sweet, cakey and fruity, these Apple Muffins are great for a grab-and-go breakfast, lunch box addition or after dinner dessert.
- 3 Apples
- 1 tbsp Lemon Juice
- 1½ cups Apple Sauce (sweetened or unsweetened depending on your taste)
- 2 Eggs
- 1 cup Oil
- 1 tbsp Vanilla
- 3 cups Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1 tsp Cinnamon
Optional Topping One
- ½ cup Brown Sugar
Optional Topping Two
- 2 tbsp Melted Butter
- ¼ cup Brown Sugar
- 1 tbsp Flour
- ⅓ cup Quick Oats
Prep
Peel, core and dice the apples. Set them in a medium bowl, cover with cold water and add lemon juice. This will keep the apples moist and prevent them from browning while you prepare the muffin batter.
Muffins
Preheat oven to [wprm-temperature value=”350″ unit=”F”] and line a muffin tin with paper liners
Blend together the apple sauce, eggs, oil and vanilla in a large bowl.
Add in the flour, baking soda, salt and cinnamon, mix well. The batter may be quite thick.
Strain the diced apples and add to the batter. Mixing until well incorporated.
Fill each muffin liner about ¾ full, almost to the top.
Optional: Sprinkle the top with either of the optional toppings
Bake for 20-24 minutes until golden brown.
Optional Topping Two
In a small bowl combine all the ingredients and mix until consistency is rough crumble.

Modifiers and Substitutions
Sweetener: You can use 2 Cups sugar in place of the apple sauce but you may need to add some milk or water to the batter as it will be quite dry and the muffin won’t rise like a proper cake. As I noted above, I am still tweaking and playing with this Apple Muffins recipe to ensure we get it just right.
