Apple Muffins

A great way to use apples that are a little past their prime. Sweet, cakey and fruity, these Apple Muffins are great for a grab-and-go breakfast, lunch box addition or after dinner dessert.

- 3 Apples
- 1 tbsp Lemon Juice
- 1½ cups Apple Sauce sweetened or unsweetened depending on your taste
- 2 Eggs
- 1 cup Oil
- 1 tbsp Vanilla
- 3 cups Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1 tsp Cinnamon
Optional Topping Two
- 2 tbsp Melted Butter
- ¼ cup Brown Sugar
- 1 tbsp Flour
- ⅓ cup Quick Oats
Prep
Peel, core and dice the apples. Set them in a medium bowl, cover with cold water and add lemon juice. This will keep the apples moist and prevent them from browning while you prepare the muffin batter.
Muffins
Preheat oven to 350 °F and line a muffin tin with paper liners
Blend together the apple sauce, eggs, oil and vanilla in a large bowl.
Add in the flour, baking soda, salt and cinnamon, mix well. The batter may be quite thick.
Strain the diced apples and add to the batter. Mixing until well incorporated.
Fill each muffin liner about ¾ full, almost to the top.
Optional: Sprinkle the top with either of the optional toppings
Bake for 20-24 minutes until golden brown.
