Apple Muffins

A great way to use apples that are a little past their prime. Sweet, cakey and fruity, these Apple Muffins are great for a grab-and-go breakfast, lunch box addition or after dinner dessert.

Ingredients
  

  • 3 Apples
  • 1 tbsp Lemon Juice
  • cups Apple Sauce sweetened or unsweetened depending on your taste
  • 2 Eggs
  • 1 cup Oil
  • 1 tbsp Vanilla
  • 3 cups Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon

Optional Topping One

  • ½ cup Brown Sugar

Optional Topping Two

  • 2 tbsp Melted Butter
  • ¼ cup Brown Sugar
  • 1 tbsp Flour
  • cup Quick Oats

Instructions
 

Prep

  • Peel, core and dice the apples. Set them in a medium bowl, cover with cold water and add lemon juice. This will keep the apples moist and prevent them from browning while you prepare the muffin batter.

Muffins

  • Preheat oven to 350 °F and line a muffin tin with paper liners
  • Blend together the apple sauce, eggs, oil and vanilla in a large bowl.
  • Add in the flour, baking soda, salt and cinnamon, mix well. The batter may be quite thick.
  • Strain the diced apples and add to the batter. Mixing until well incorporated.
  • Fill each muffin liner about ¾ full, almost to the top.
  • Optional: Sprinkle the top with either of the optional toppings
  • Bake for 20-24 minutes until golden brown.

Optional Topping Two

  • In a small bowl combine all the ingredients and mix until consistency is rough crumble.
